The Celesia family livestock farm is situated at the southernmost point of the Rivarolo Canavese municipal boundary, not far from Lombardore, in a small hamlet a few minutes’ drive from the north side of Turin. It specialises in Piemontese cattle (about 250 head in the recently renovated barn) and sells classic cuts from the heifers and steers at its shop: hence T-one steaks, sliced raw veal, sausages and joints for boiling. It also sells seasonal specialities such as meat in aspic in summer and meat-filled agnolotti (in collaboration with the Castello di Caravino pasta factory) in winter. The pork from the farm’s pigs is used to make typical specialities such as boiled salami, cacciatorini, lardo, cotechino, pancetta, guanciale, galantines and salampatata (potato salami, typical of the Canavese district). The farm has as many as 85 hectares of arable land on which it grows its own forage, corn and barley to feed the animals. The range is rounded off by the farm’s eggs and potatoes. (The shop is open on Thursday, Friday and Saturday from 8.30am to 12.30pm and from 4.00pm to 7.00pm.
