Birrificio Gilac came into being in Val della Torre in 2007 and moved to the industrial estate in Rivoli in 2013. The only member of the original management team left is Claudia Bidone, who now runs the business in partnership with Giuseppe Piovano. The Rivoli headquarters houses the brewery, the warehouse, the offices and a special area for minor events and monthly open days during which visitors can visit the premises and take part in tastings. The range of low- and high-fermentation beers is inspired by various traditional styles and made with well-selected ingredients. Their common feature is easy drinkability though some are more structured than others to cater for the most discerning palates. Of the 14 different typologies produced, worthy of a special mention are: the light, herby and floral Dorita (a Pils); the fruity, fizzy Divina (an Italian Grape Ale), made with moscato grape must; Chanda (a hoppy lager), pale with bitterer notes; Diva Gold made with the Metodo Classico spumante process; the gluten-free Bionda (Helles) made with organic ingredients; and Biondina, now in a new bottle designed for sale in organic food shops.
