This butcher’s shop sells only the very best cuts of meat from Piedmontese heifers, steers and oxen, and is the only one in Turin to be a member of the Carrù Fattened Ox Protection Consortium. The pork comes from pigs born, raised and processed in Italy, the lamb and kid from the Stura and Po Valleys. Here it is possible to find the lean, protein-packed meat of the Sambucano lamb, which stands out for its firmness and flavour: two specialities of the house are Sambucano sausage with mountain herbs and Sambucano hamburgers. I Binari del Gusto is also well-known for its Carmagnola grey rabbit and Piedmontese blonde chicken (both native breeds and Slow Food Presidia), its capons and its roosters. In addition to the usual cuts of meat and seasonal specialities such as Nebbiolo red wine-infused veal, stewed beef and boiled meat in aspic, it is also possible to find deli items such as vitello tonnato, insalata russa, antipasto Gianduja (featuring ten ingredients) lasagne and crespelle.
