The De Martini bakery was established by Mauro 25 years ago, driven by his passion for baking. Since then, he has always selected the best-quality flours from local mills and sought to produce the finest possible sourdough starters and biga, a dough of flour, water and yeast, for his bread and other baked goods. With the passing of time, Mauro has begun to work with increasingly unrefined flours to give his bread a pleasantly rustic flavour and make it more and more digestible. In addition to traditional bread and grissini, Mauro bakes and sells a different special bread every day. On Sundays, for example, it’s possible to find his highly popular rye bread. An impressive array of grissini is always available: from those made with water to those made with oil, as well as a variety of flavours that range from sesame seed, cheese and tomato, and rosemary to corn and chili. Mauro also bakes fragrant biscuits, cornmeal cookies and cakes, not to mention focaccia and pizza slices, which you can enjoy with a glass of craft beer in the bar next door.
