The historic Erbaluce di Caluso producers’ cellar is in the centre of town near the agrarian school, which dates from the same period. It stocks the classic local wines and is open for sales and for visits to the new tasting room and the vineyards. From standard products to celebrated labels, wine can be bought in practical bags in boxes, very popular with customers, or in bottles. The cellar prides itself on its passitos, classic and superior, not to mention its Erbaluces (from the classic version to Fiordighiaccio and Baiarda) and, above all, the metodo classico spumantes: Goccia d’oro, which is aged for 24 months on the less, and the superior 96 month-version. Two spumantes are made with the Charmat method: Cuvée Soleil, made with erbaluce grapes, and Cuvèe Rosé, made from a Canavese DOC red wine. Then come a young Canavese DOC red made with barbera grapes, a Canavese Nebbiolo and an aged Canavese red. The cellar recently began to produce a vermouth, red and white, under its own label and from its own recipe.
