Alessandro Moschietto butcher’s shop is situated just outside Giaveno, in the village of Buffa on the Coazze road. It sells beef and veal, poultry, rabbits and pork, readymade meat dishes, sausages, kebabs and meatballs. In the workshop next door, they bone and hang meat to make it more tender and tastier, and cure pork and beef from cattle at the end of their working lives and make cotechini, salami with cubed Fontina d’Alpeggio, a new addition to the range, and occasionally goat salami, a rarity. In given periods of the year and the festive period, the shop also stocks ox meat and mutton, lamb and kid. The beef and veal come mainly from home-reared cattle of the Garronese and Limousine breeds, all fed on corn, hay, barley and soya beans grown on Moschietto’s own land in the Villardora. Here they also grow the cereals to produce fine flours such as fioretto corn flour, wholemeal polenta flour and cornmeal. Also on sale a selection of local mountain potatoes.
