This mill at the confluence of the River Po with the River Orco was built by the Pagliero family in 1911. Today it’s Giorgio Pagliero who runs the show and oversees supplies of the main cereals for milling and sale as flour. They include fine varieties of maize such as pignoletto rosso, barley, rye, soft and durum wheat, buckwheat and spelt. The sourcing of the cereals locally ensures that almost all the flours sold by the mill are zero-mile. Particularly interesting is the stone-ground flour to make standard polenta and the cornmeal-chestnut flour for a typically autumn version. The pulses milled come from Centallo in the province of Cuneo. For some years now the mill has produced confectionery such as cornmeal biscuits, breakfast rusks, shortcrust frollini cookies and the delicious sables, round shortbread cookies. At weekends it also sells bread, pizza and focaccia. All products are distributed to pizzerias and restaurants and are on sale at the shop in Castellamonte.
