This butcher’s shop was established by Bruno Favaro in Casalborgone in 1990. It sells a vast range of charcuterie, such as cured pork and veal flavoured with Barbera, boiled pork and wild boar salami, and the specialty of the house, salamella with garlic. With the the arrival of chef Gianluigi Ioli in 2003, the offer has been expanded to include a deli department and ready meals.
Specialities include the so-called Piemontese piadina piemontese 2.0 (filled with pork capocollo, creamed peppers, salad and coriander), Russian salad, capon salad and Piedmontese agnolotti filled with veal, pork and rabbit. We also recommend the gogu, ravioli filled with sausage and peas, a Casalborgone delicacy. Excellent too is the fritto misto, mixed fry (made to order omly), which includes delicious fried sweet semolina. Also made to order is the increasingly popular sushi of Piedmontese fassona veal. There is no shortage either of typical local products, such as the grissini of the Gran dy bric Chivasso hills supply chain, produced in Berzano San Pietro (Asti). Open every day Monday to Saturday from 8am to 12.30pm and from 4pm to 7pm (morning only on Wednesday).
