This shop in the heart of Castellamonte is a benchmark for lovers of quality baked products. Paolo Goretti, his brother Marco and his wife Nadia Vacchiero Salet have been running it with passion and competence since 2007, and they are now about to open a new place in Montalto Dora.
The bakery is famous for its long-lasting medium-large loaves. The flours used are ground exclusively from local grains by small mills in the area. A good example is the pane canavesano, made with rye, pignoletto rosso, rebelde and san pastore flour. The range also includes a variety of special breads, from Walser to buckwheat, from pumpernickel to Pugliese.
Other pieces de resistance are the hand-pulled grissini, the focaccias (including sweet versions) and the peel pizzas. The seasonal yeast cake range features panettone and colomba, made with home-made flavourings and hand-chopped candied fruits. Bauletto, a yeasted fruit loaf is available all year round with seasonal variants.
