The Caretto farm is involved in a number of different activities – from grape cultivation for the production of high-quality wines and maize-growing to Piedmontese cattle breeding and apiculture – always attaching the utmost importance to the environment and the promotion of local produce. Since 2010 the farm has grown heirloom Piedmontese maize varieties such as pignoletto rosso to produce polenta flour and galettes, both salted and sweet (with plain and orange-flavoured white chocolate). The flour is ground at local mills and sold at the farm shop and other points of sale in the area. The wine range features a standard Erbaluce and an Erbaluce Selezione, which after resting briefly in barriques, can be aged for years. Other wines include: a Metodo Classico spumante that ages for over 60 months on the lees; two rosés, one still, the other a Charmat-method Spumante Brut that makes an excellent aperitif; and a wonderful passito, delicious after a meal. Certified as a “fattoria didattica”, an educational farm, by the Piedmont Regional Authority since 2008, Caretto now organises visits to the vineyards and the wine cellar.
