Surrounded by green fields on the plainland round of Pralormo, this farm breeds Friesian dairy cattle and houses a constantly renovated modern dairy (with a view of the town’s hilltop castle famous for the Messer Tulipano event). This is the context in which Valter Villata, his wife and his children work day by day to make the very finest dairy produce. Always available at the farm are fresh products such as raw milk, mozzarellas (balls and filled rolls), ricotta, stracchino, robiola, scamorza, tomini and primosale, as well as 20 flavours of yoghurt, cream desserts, creme caramel, chocolate and panna cotta. Mature cheeses include: Toma, classic and aromatized (with pepper, chili and rosemary), Caprotti, made with kid’s rennet, Tommentaler and Ticinello. A new product is butter in single pats. All these products are on sale solely at the following street and town markets: on Monday in San Damiano d’Asti, on Tuesday in Asti, on Wednesday in Chieri at the Coldiretti farmers’ market, on Thursdays in Villanova d’Asti, Carmagnola (Coldireti) and Asti, on Friday in Asti, on Saturday in Poirino and Cambiano, and every Sunday in Turin at the Campagna Amica market.
