It was Fabio Porcari who established this interesting little family farm. After moving from Turin to Drubiaglio, a small village on the outskirts of Avigliana, he became fascinated with the local flat blond onion, a variety that was risking extinction, and began to cultivate it to preserve its history. The onion was already present on the Slow Food Ark of Taste and has since received Deco certification, and recently became a Slow Food Presidium. The farm attaches great importance to cultivation without the use of chemicals and respect for the seasons to protect its land from contamination. Besides onions, it also grows red, white and yellow chard, purple cauliflower, salanova lettuce, kohlrabi, berry fruits and certain types of tomato.

The onion is processed to make compotes, preserved in oil and in sweet and sour sauce, and pickled. Fabio provides a consultancy service for recipes and nutritional advice, exchanges seeds with certified organic farms, and is careful to salvage packaging materials. Produce may be purchased directly at the farm or by home delivery.
