Dropstery is the new trademark Maurizio Galiano and Ivano Baiunco registered last year to convey a more specific idea of their coffee-roasting activity, namely that they were among the very first to introduce the culture of specialty coffee to Turin.

Until a short time ago, they operated under the Gocce di Cioccolato (Chocolate Drops), the name of the high-class cake shop where it is still possible to buy their coffees, as well as cakes, petite patisserie, sumptuous breakfast pastries and wonderful yeasted cakes that get better and better, year by year.

The decision to differentiate the two trademarks was made to show how the enterprise has two distinct souls: on the one hand cakes and confectionery, on the other coffee roasting, which has always been practised with consummate skill and attention to the provenance of coffees. To the point that Maurizio and Ivano are co-owners with the local growers of a small eco-responsible plantation in the Copan region of Honduras.

They currently stock nine coffee typologies, all single origin, which will soon be joined by a blend, their first, from Brazil.
