Dropstery is the micro craft coffee roasting business of Maurizio Galiano and Ivano Baiunco, among the first to introduce the culture of specialty coffee to Turin. Their objective is not only to produce high quality coffee but also to work with sedulous attention to sustainability and respect for the producer companies. The result is that all Dropstery’s coffees tell the story of the people who grow them: Castanhas do Brasil, for instance, comes from the Cocatrel cooperative, whose members are able to monitor their product’s journey with a QR code that ensures its complete traceability. Taferi Kela is made by one of the most “transparent” companies in Ethiopia, and Costarica is produced by the family farm established by Iván Solís and his wife Leandra Cordero in the province of San José.
The roasting workshop is in Via Gramegna (where the coffee is not on sale to the public). It is possible to enjoy and buy the coffee at the excellent Gocce di Cioccolato patisserie-cafeteria at Via Stradella 242.
