Frutto Permesso is a cooperative of a number of farms that produce organic fruit – among which apple varieties characteristic of the Pinerolo area – and breed Piedmontese cattle. At its outlet in Bibiana and shops in Torino, inVia Gianfrancesco Re and Via Napione, it sells cereals and flours, fruit juices, compotes and jams, spirits, vinegars and cider. Particularly interesting are the apple juices – made with the Slow Food Presidium carla, calvilla, magnana and gambafina varieties – and infusions of wild herbs and apple juice. Also on sale are cured meats and cheeses from small local producers and the wine of the Malva Arnaldi Foundation, a Master of Taste in Bibiana. For 25 years now, the cooperative has produced excellent ciders, including Ice Cider, a match for the ice wines of Northern Europe. Frutto Permesso also houses a “teaching farm”, which lays on educational activities for school parties and families, and a restaurant serving dishes made with the cooperative’s finest produce.
