This shop in Via Cibrario is very popular with the locals and lovers of quality. Everything began with a family of livestock breeders in Robilante, in the province of Cuneo (Cn), whose descendants have been selling the finest cuts of their Mastro Taricco-brand Piedmontese fassone veal here since 1987, along with the speciality of the house, Curenta (raw meat blended with Castelmagno cheese), Grana Padano, extra virgin olive oil, salt, pepper, garlic, Steccata (white meats barded with lardo and pancetta), and their legendary morsels of macerated, dried and vacuum-packed leg of tender beef for eating on the move. A whole counter in the shop is given over to 70 or so types of charcuterie and cheese, featuring Torta di Grazia, a pie with a filling of cow’s cheese, speck and walnuts, Plaisentif cheese, coppa flavoured with Nebbiolo wine, salame di turgia (salami made with the meat of cattle no longer reproductive) and lardo studded with pistachio nuts. Also on sale are fresh pasta such as gnocchi from the Val Varaita, hand-pinched agnolotti filled with minced fassone veal, and egg tajarin (taglierini), plus classic Mastro Taricco sauces, trout, char, bread, tea, deli goods, jams, wines from small producers and durum wheat pasta from top Italian manufacturers.
