L’Evo di Eva

At the end of 2019, after years working in the quality control in the automative and drinks packaging sectors, Eva Collini opened this shop, one of the few in Italy to specialise in green gold – extra virgin olive oil. Its name is a play on the acronym EVA and that of the owner herself and it stocks an impressive of oils and the range of varieties and packaging sizes is vast. You’ll find everything here, from glass bottles to pottery jars to 5-ltre tins. Equally diversified are origins, with 14 Italian regions, available on a rotation basis, plus a few overseas curiosities.
In addition to oil (which includes an own brand line made with coratina olives), the shop also stocks a number of by-products: numerous jars of produce conserved in oil, olives (candied included), compotes, cosmetics and even olive leaf beer and Taggiasca olive gin. The product range is completed by a few fine vinegars and a good selection of wines and vermouth with which it’s possible to create gift baskets, especially in the Christmas period. At lunchtime and the cocktail hour, Eva offers tastings of appetisers, bruschettas, vegetables, cheese and preserves accompanied by diverse extra virgin olive oils.
