Seven years ago, the Parsifal brewery, first opened in 2008, was taken over by three friends and is still run by one of them, brewmaster Maurizio Musi. Muarizio is now the heart and soul of the place, overseeing production through every phase, from the sourcing of the finest malts to the selection of the best hops for the various styles, and carrying out constant and passionate research, driven by a desire to create new products of distinction. His beers are on sale at the beershop, open every day from Tuesday to Saturday, and, more importantly (since they are designed mainly to be drunk on tap) at the brewpub next door. Maurizio interprets a variety of different brewing styles, dedicating each a personal recipe of his own. Hence the Pils Avalon, the Doppelbock Re Artù and the Weiss Lady Morgana, plus a Strong Golden Ale, a Belgian Ale, an India Pale Ale and a Rauchbier. The range is rounded off by beers for winter nights: a Stout, a Porter and an Imperial Stout, a classic at Christmas. The same excellent quality characterises the food served to the pub next door, tasty and healthy and made with the finest, well-sourced ingredients.
