This cooperative came into being in 2004 as a result of an international cooperation project with groups of small coffee producers in Guatemala. Its aim was to promote fair trade internationally and form a partnership involving consumers, producers and manufacturer.
This preamble is necessary to explain the work at the Turin’s Lorusso e Cutugno prison, at the San Michele prison in Alessandria and at Saluzzo prison. Inside the Turin prison a fully-equipped coffee roasting facility produces Huehuetenango Highland coffee from Guatemala, which became Slow Food’s first international presidium in 2002. In Alessandria they installed a social bakery in 2012 to make organic bread and grissini, and thus train bakers. In Saluzzo they have now begun to brew craft beers inspired by traditional styles, hence pils, ale, Weiss and saison.
