This farming estate was established in the middle of the 18th century between Caluso and Mazzè. The Bianco family’s covers just over two acres of land and is exclusively given over to the growing of erbaluce grapes.
Owner Daniele Bianco, a keen oenologist, concentrates production on three types of wine: Erbaluce Classico, characterised by floral notes, full flavour and balance; Caluso Spumante, a stylish, aromatic Metodo Classico, and Caluso Passito, of which some very old vintages are to be found in the farm cellar. Despite being well over 90, Daniele’s father, Renato, still often puts in an appearance in the vineyards and continues to play an active role in managing the estate.
The passito is produced by drying the grapes on special racks and aging the wine for at least four months in oak barrels in the farm cellars in the centre of Caluso, while the degorgement of the spumantes is carried out the traditional way, by hand, thereby keeping the old winemaking practices of this precious cellar alive.
