In 2021, the Varvello family celebrated a century of tradition, a journey of four generations dedicated to the pursuit of excellence through responsible sourcing of ingredients, respect for the environment, commitment to sustainability and a constant spirit of innovation. Today the business is run by Davide Varvello, who continues to promote these founding values.
In the cellars at La Loggia, where every phase in the production process is carefully monitored, fine vinegars with intense, complex aromas are kept in oak and larch barrels. The product range has been expanded to include lines for the table (Oro, Aceto Reale) and for catering (Gran Sapore), organic vinegars and Alta Gamma, or top of the range, vinegars for gastronomy and international cuisine. The flagship products are the Barbaresco, Barolo, Prosecco, Chianti, Pinot Grigio vinegars, the ones made from Piedmontese brown black rice, Piedmontese and Trentino organic apples and the new one made with pomegranate. The PGI Modena balsamic vinegar, aged at least 12 years, adds a touch of refinement to glazes and condiments.
